To the north
we find Sierra de Cebollera, Picos de Urbión and Sierra de la Demanda, that start to warm up as soon as the sun comes up and favors the formation of early convergences. To the south we find ample cereal fields, favoring the circulation of breezes that form cloud streets over the plateau, forming convergences long and wide.
Convergence typically starts to form near the field to the N, normally sighting the first cu clouds one or two hours earlier than to the S, where we usually find higher ceilings. It´s easy to jump to Teruel (Sierra de Albarracín), Burgos (Sierra de la Demanda) or Guadalajara and Segovia (Sistema Central).
Generally the thermals are quite defined by cloud streets, mainly over the cereal crops (easy flight). Worth mentioning, the least, some days with great blue thermal flight.

With N wind
particularly in winter, the mountain wave is spectacular, with great lenticular clouds.
Ridge flying on the slopes of Cebollera, there is Sierra la Mata (E orientation), Sierra de Cabrejas (over 20 Kms running N & S) Cerro de San Juan, Sierra de Santa Ana etc.
The array of convergences formed at the E runs the whole peninsula from N to S, joining Sistema Ibérico with Picos de Urbión and Sierra de la Demanda at the North and Sierra de Alcaraz and Sierra del Segura to the South, which again join perpendicularly to the West with Sierra Morena, Montes de Toledo & Sistema Central.
